Easy, Elegant, and Economical Mother’s Day Brunch

Mother’s Day is Sunday, May 11th. That means you have just enough time to plan a healthy brunch menu for your mum, your friends, or yourself!  To make it easy for you, I’ve put together a few ideas for Mother’s Day brunch. They’re special enough for Mom’s special day and easy on the cook—for a lot less money than eating out. All of these recipes earn Guiding Stars for their nutrition content (you know Mom will appreciate that you’re looking out for her health). And for extra brownie points, you can even treat Mom to brunch in bed.

Simple Sippers

Nothing says elegant like a festive pre-meal beverage! Mocktails and non-alcoholic spritzers are fun to make and usually only require a handful of ingredients. And they don’t need to be complicated—easy mocktail ideas are all over the internet (I usually check Pinterest first). Of course, you can always go classic and offer fresh-squeezed juice in a pretty goblet with a pretty garnish.

One of my favorite mocktails is simple but delicious, and stars bubbly, tangy kombucha. Stir together a cup of ginger-berry kombucha with ½ cup of orange or grapefruit juice. Garnish with mint leaves and serve with a straw. (You can also mix any favorite kombucha flavor with flavored seltzer and a squeeze of lemon or lime juice.) Easy Entrées for Every Taste

For the main event, I suggest combining a savory selection that includes protein and vegetables. (Don’t worry, you can offer something sweeter on the side, or even a dessert, to make it extra special for Mom.)
