This meatloaf tastes just like your mother used to make it, but with lean meat and oats to bind the mixture and keep it moist, this version is a whole lot healthier. If you like more veggies in your meatloaf, feel free to add more of your favorites to the mix.

Ingredients

  • 7 Tbsp. ketchup, divided
  • 1 Tbsp. Worcestershire sauce
  • 1 cup quick-cooking oats
  • ½ cup minced onion
  • 2 Tbsp. parsley
  • 1 Tbsp. basil
  • ¼ tsp. salt
  • ½ tsp. pepper
  • 1 lb. 90% lean ground beef
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped

Directions

  1. Preheat oven to 375ºF. Coat a 9″x5″ loaf pan with cooking spray.
  2. Combine 4 tablespoons of ketchup and all other ingredients in a large bowl. Stir until well blended.
  3. Pat mixture into loaf pan and top with remaining 3 tablespoons ketchup. Bake to a minimum internal temperature of 160ºF (1 hour).
  4. Remove from oven and let stand to finish cooking (10 minutes). Serve in slices.
