Ingredients

Pasta:

  • 2 cups pasta
  • 3 cups Guiding Stars-worthy pasta sauce
  • 2 Tbsp. Parmesan cheese

Shrimp Salad:

  • 1 (5 oz.) bag lettuce mix
  • 1 cup cooked shrimp, peeled and deveined, tails removed
  • 2 carrots, grated
  • 1 cup diced tomato
  • 1 lemon, wedged
  • Pepper to taste

Directions

  1. Cook pasta according to package directions. Drain in colander.
  2. While pasta cooks, construct salads with lettuce, shrimp, and vegetables. Dress with lemon and pepper to taste.
  3. Heat sauce in pasta pan and stir in pasta. Divide pasta between salad plates and serve topped with cheese.
