Saucy Avocados

Ingredients

  • 2 ripe avocados
  • ½ cup fresh basil
  • 2 cloves garlic
  • 2 Tbsp. lemon juice
  • ⅓ cup olive oil
  • 12 oz. whole grain spaghetti, cooked
  • 1 cup cherry tomatoes, halved
  • ½ cup corn

Directions

  1. Combine avocado, basil, garlic and lemon juice in the bowl of a food processor. Add oil in a slow stream until well pureed.
  2. Toss with hot pasta, cherry tomatoes and corn. Serve immediately.
