Sweet Potato Whole Grain Pancakes

With sweet potatoes to flavor these whole grain pancakes, you won’t need syrup to sweeten them. Try them with all natural nut butter for an added protein boost.

Ingredients

  • 1 cup sweet potato puree
  • 3 eggs
  • 1 cup skim milk
  • ¾ cup whole wheat flour
  • ¾ cup white flour
  • ¼ cup ground flax
  • 1 tsp. baking powder
  • 1 Tbsp. white sugar
  • 1 Tbsp. brown sugar
  • ¼ tsp. salt
  • ¼ tsp. nutmeg
  • 1 tsp. cinnamon

Directions

  1. Mix sweet potato puree, eggs, and milk until well combined.
  2. Mix dry ingredients together in separate bowl.
  3. Slowly add dry ingredients mix into potato mixture and mix gently to incorporate.
  4. Heat nonstick pan to medium heat and pour about  cup batter into circles. Flip once gently browned and cook until both sides are cooked.
