Winter’s Favorite Salad

Crisp summer vegetables like tomatoes and cucumbers aren’t always easy to source locally in the colder months, but that doesn’t mean you can’t savor a great salad. Sweet potatoes and apples, which store nicely all through winter, pair perfectly with a little toasted quinoa for a lightly sweet and thoroughly filling salad that will pair perfectly with a little chicken for a great meal.

Never let your salads get boring. This tart salad incorporates quinoa and apple to support your greens with the nutrition and flavor of fruit and whole grain.

Ingredients

Salad:

  • ⅔ cup quinoa, cooked
  • 1 lb. sweet potatoes, peeled, cubed and roasted
  • 1 Tbsp. olive oil
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • 2 large apples, diced
  • 8 cups baby greens
  • ¼ medium red onion, sliced

Dressing:

  • ¼ cup apple cider vinegar
  • 1 tsp. Dijon mustard
  • ¼ cup extra virgin olive oil
  • pinch of salt and pepper

Directions

  1. Preheat the oven to 400ºF. Spread the cooked quinoa on a baking sheet and toast for 3-5 minutes.
  2. Whisk together the dressing ingredients. Combine the salad ingredients and toss with dressing to coat.
  3. Serve immediately.
