Halibut with Cilantro Pesto
Richly flavored pesto is the flavor star of this simple fish dish. Earthy walnuts play against vibrant cilantro and tangy lime for a well-rounded experience for your palate that will work well with any firm white fish. Use this as an excuse to try new local fish offered fresh from your fish market.
Tip: When working with hot peppers, wear gloves to protect your skin. Most of the heat is concentrated in the seeds and ribs, so removed these thoroughly to moderate the heat of the pepper.

Ingredients
Cilantro Pesto:
- ½ cup chopped fresh cilantro
- 2 Tbsp. finely chopped walnuts
- 2 Tbsp. grated Parmesan cheese
- 1 tsp. lime zest
- 1 Tbsp. lime juice
- 2 tsp. olive oil
- 1 garlic clove, minced
- 1 jalapeño, seeded and minced (optional)
Halibut:
- cooking spray
- 4 (4 oz.) halibut or salmon fillets
Directions
- Stir together the pesto ingredients.
- Preheat broiler or grill to medium and use the cooking spray to coat your rack.
- Brush one side of the fish with half the pesto. Place the fish with the pesto side up on the grill rack or in the broiler pan and cook for 4 minutes. Turn the fish and spread with the remaining pesto. Cook until it flakes easily with a fork (4-6 minutes).
