This thick, hearty soup is perfect for fall or winter, for a busy day on the run or a long-day of reading, curled up by the fire. It will bring a smoky zing to chilly nights—just make sure you taste the soup as you season it to make sure you have not too little and not too much, but just the right amount of spice.
Ingredients
- 1 can of fat-free, vegetarian refried beans
- 1 can of low-sodium black beans, drained and rinsed
- 1 cup frozen roasted corn
- 2 cups of low-sodium vegetable broth
- 1 cup baby tomatoes, quartered
- 1 cup carrots, diced
- 1 tablespoon garlic, diced
- 1 tablespoon Tabasco sauce
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1/2 teaspoon chipotle chili powder
Directions
- In a slow cooker, on high, soften the refried beans while you prepare the other ingredients.
- Add remaining ingredients and stir. Cook on high for 3-4 hours or on low for 6-8 hours.
