If you have a spiralizer, you can use the ricing option to make carrot “rice” as an alternative to grating the carrots. Play around with the balance of nuts, nut butters, and dried fruit to make it your own. Look for nut butters that have one ingredient (nuts!) and dried fruit that is either unsweetened or juice-sweetened to keep the nutrition high and the added sugar low.
If you’re not in the mood for a frozen treat, bake these at 375ºF for 25-30 minutes until bubbling for a hot pudding-like dish.
Ingredients
- 2 large carrots, finely grated
- ½ cup pecans, chopped
- ⅓ cup golden raisins
- ¼ tsp. salt
- 1 cup almond butter
- 1 Tbsp. maple syrup
Directions
- Combine all ingredients and mix thoroughly,
- Line a large baking pan with parchment paper and spread the mix into the pan, pressing into an even layer.
- Place in the freezer until solidly set, 4-6 hours. Slice into bars while frozen and store in the fridge.
