Turkey-Stuffed Peppers

If it’s the wrong time of year to take advantage of turkey leftovers, you can use a roasted turkey breast or lean ground turkey. This recipe is meant to be flexible—mix up your lean meats, whole grains, greens and even the color of your peppers to find a combination that pleases your palate the most.

Ingredients

  • 1 cup turkey, shredded
  • 1 cup low sodium, low sugar marinara sauce
  • 4 tablespoons grated Parmesan cheese
  • 1 cup kale, chopped
  • 1 cup brown rice
  • 4 bell peppers, tops and seeds removed

Directions

  1. Preheat the oven to 450 Degrees Fahrenheit.
  2. Combine all ingredients and divide between pepper.
  3. Place the peppers in a baking dish lined with foil and bake about 30 minutes, or until peppers are soft.
