Oatmeal is a great way to start your day. It can get a little boring and same-ish if you don’t mix up the toppings. This recipe brings summery tropical flavors to a warm winter dish to make your oatmeal a mini vacation in the middle of your week.
Ingredients
Oatmeal:
- 1 cup steel-cut oats
Stir-Ins:
- ⅓ cup coconut milk
- ½ cup chopped mango
- 1 tsp. grated ginger
- 1 tsp. vanilla extract
- ¼ tsp. cardamom
Toppings:
- 2 Tbsp. light brown sugar
- 1 Tbsp. chopped pistachios
- 1 Tbsp. cacao nibs
Directions
- Cook steel-cut oats according to the package directions (30 min).
- Add stir-in ingredients and cook until heated through (5 minutes).
- Divide oatmeal between four bowls and top with toppings to serve.
