Tropical Twister Oatmeal

Oatmeal is a great way to start your day. It can get a little boring and same-ish if you don’t mix up the toppings. This recipe brings summery tropical flavors to a warm winter dish to make your oatmeal a mini vacation in the middle of your week.

Ingredients

  • Oatmeal:

    • 1 cup steel-cut oats

    Stir-Ins:

    • ⅓ cup coconut milk
    • ½ cup chopped mango
    • 1 tsp. grated ginger
    • 1 tsp. vanilla extract
    • ¼ tsp. cardamom

    Toppings:

    • 2 Tbsp. light brown sugar
    • 1 Tbsp. chopped pistachios
    • 1 Tbsp. cacao nibs

Directions

  1. Cook steel-cut oats according to the package directions (30 min).
  2. Add stir-in ingredients and cook until heated through (5 minutes).
  3. Divide oatmeal between four bowls and top with toppings to serve.
