Ingredients

  • Dressing:

    • ⅓ cup chopped cilantro
    • ¼ cup rice vinegar
    • 2 Tbsp. olive oil
    • ¼ tsp. salt

    Coleslaw:

    • 6 cups thinly sliced green cabbage
    • 1½ cups grated carrots

Directions

  1. Whisk together dressing ingredients in a large bowl.
  2. Add coleslaw veggies and toss to coat.
