When your meal needs that extra crunch, try this recipe as a side dish or a taco topping. Cabbage paired with cilantro work perfectly atop a light and lovely fish taco or to add some green and crisp texture to enchiladas.



  • ⅓ cup chopped cilantro
  • ¼ cup rice vinegar
  • 2 Tbsp. olive oil
  • ¼ tsp. salt


  • 6 cups thinly sliced green cabbage
  • 1½ cups grated carrots


  1. Whisk together dressing ingredients in a large bowl.
  2. Add coleslaw veggies and toss to coat.
