Sweet Potato Colcannon

Colcannon is a traditional Irish dish of mashed potatoes packed with greens. This variation uses sweet potato for a little extra stand-alone flavor and brilliant color on your plate.

Tip: This recipe works best with leftover baked sweet potatoes.

Ingredients

  • 1 Tbsp. olive oil
  • 1 onion, chopped
  • 4 cups chopped cabbage
  • 1 tsp. caraway seed
  • 1½ lbs. sweet potato, roasted, skinned, and chopped
  • 2 cups chopped spinach
  • Pepper to taste

Directions

  1. Heat oil in a large skillet over medium heat. Add the onion and cook, stirring, until soft and browning (5-8 minutes).
  2. Add cabbage and caraway seed and cook, stirring, until the cabbage is soft (5-6 minutes).
  3. Stir in the sweet potato, mashing with the back of your spoon. Add spinach and cook until sweet potato is heated through and spinach is wilted (4-5 minutes). Add pepper to taste.
