Honey-Thyme Salmon Foil Packet

Fish can be great for you, but if you’re looking for the best fish for sustainability and minimizing mercury intake (which is especially important for pregnant and nursing women and young children), look for wild-caught Alaskan salmon.

Ingredients

  • 2 Tbsp. honey
  • 3 cloves garlic, minced
  • 1 Tbsp. olive oil
  • 1 Tbsp. white wine vinegar
  • 1 Tbsp. fresh thyme leaves
  • 2 lbs. salmon

Directions

  1. Preheat oven to 375º F. Line a baking sheet with foil.
  2. Whisk together honey, garlic, olive oil, vinegar and thyme.
  3. Place salmon onto the foil and fold up the sides. Spoon the honey over the fish and fold the packet closed.
  4. Bake until cooked through, 15-20 minutes. Serve immediately.
