Crisp, refreshing cucumber is the perfect flavor partner for an abundance of fresh herbs. Enjoy this salad during the dog days of summer, when something cool is exactly what you need.

Ingredients

  • ¼ cup plain, low-fat yogurt
  • 2 Tbsp. coarsely chopped fresh dill
  • 1 Tbsp. coarsely chopped fresh parsley
  • 2 Tbsp. fresh lemon juice
  • 1 Tbsp. extra-virgin olive oil
  • 1½ tsp. coarsely chopped mint
  • 2 tsp. Dijon mustard
  • ¼ tsp. salt
  • ¼ tsp. freshly ground black pepper
  • 1 garlic clove
  • 5½ cups thinly sliced cucumber (about 2 large)
  • 2½ cups thinly sliced red onion

Directions

1.) Combine the first 10 ingredients in a food processor or a blender, and process until well blended.

2.) Combine the cucumber and onion in a large bowl. Drizzle with yogurt mixture, and toss to coat. Serve immediately.
