Garlic White Bean Dip

Roasting brings a sweet note to the powerful flavor of garlic which shines in this simple dip. Mix up the fresh herbs to star your favorite flavors. Serve with whole wheat pita bread or fresh veggies.

Ingredients

  • 1 head garlic
  • 2 Tbsp. olive oil, divided
  • 1 (15 oz.) can no-salt-added cannellini beans, drained and rinsed
  • 1 Tbsp. fresh rosemary
  • 2 Tbsp. fresh thyme

Directions

  1. Preheat oven to 400ºF. Slice top off garlic to expose cloves. Sprinkle with 1 teaspoon of oil and wrap in foil. Bake until cloves are tender (20-30 minutes).
  2. When garlic is cool enough to handle, pop cloves out of the skin.
  3. Purée all ingredients in a blender or food processor until smooth.
