Ingredients
- 1 (15 oz.) can garbanzo beans
- 1 medium tomato, chopped
- ½ cup grated carrot
- ½ cup chopped celery
- 3 green onions, chopped
- 2 Tbsp. vegan mayonnaise
- 1 Tbsp. mustard
- ½ tsp. salt
- ¼ tsp. black pepper
- 4 romaine lettuce leaves
Directions
- Mash beans, leaving some large pieces. Gently mix in remaining ingredients except lettuce.
- Wrap salad mixture in lettuce to serve.
