Wrapping hearty bean salads in lettuce is a great trick to play with if bread and wraps aren’t your favorite source of whole grains but you love the convenience of a sandwich or wrap. This veggie-packed, vegan alternative to tuna salad is flavorful, nutritious, and easy.

Ingredients

  • 1 (15 oz.) can garbanzo beans
  • 1 medium tomato, chopped
  • ½ cup grated carrot
  • ½ cup chopped celery
  • 3 green onions, chopped
  • 2 Tbsp. vegan mayonnaise
  • 1 Tbsp. mustard
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • 4 romaine lettuce leaves

Directions

  1. Mash beans, leaving some large pieces. Gently mix in remaining ingredients except lettuce.
  2. Wrap salad mixture in lettuce to serve.
