
Quick, easy, and delicious, this simple stew is a great vegetarian starter or side. To turn it into a full meal, add a can of your favorite low-sodium beans with the peas and treat it as four servings instead of six.
Ingredients
- ½ cup water
- 2 medium onions, chopped
- 1 (28 oz.) can chopped tomatoes, undrained
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 6 red potatoes, cubed
- 1 tsp. basil
- 1 tsp. oregano
- 1 tsp. Italian seasoning
- ½ tsp. salt
- 2 cups peas
Directions
- Heat water in a large pot. Add onions and cook over medium-high heat, stirring frequently until onions are soft (4-5 minutes).
- Add undrained tomatoes, garlic, bell pepper, potatoes, and seasonings and bring to a simmer. Cover and cook until potatoes are tender (20-25 minutes).
- Stir in peas and cook until heated through (2-3 minutes).
