Easy Vegetable Stew

Quick, easy, and delicious, this simple stew is a great vegetarian starter or side. To turn it into a full meal, add a can of your favorite low-sodium beans with the peas and treat it as four servings instead of six.

Ingredients

  • ½ cup water
  • 2 medium onions, chopped
  • 1 (28 oz.) can chopped tomatoes, undrained
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 6 red potatoes, cubed
  • 1 tsp. basil
  • 1 tsp. oregano
  • 1 tsp. Italian seasoning
  • ½ tsp. salt
  • 2 cups peas

Directions

  1. Heat water in a large pot. Add onions and cook over medium-high heat, stirring frequently until onions are soft (4-5 minutes).
  2. Add undrained tomatoes, garlic, bell pepper, potatoes, and seasonings and bring to a simmer. Cover and cook until potatoes are tender (20-25 minutes).
  3. Stir in peas and cook until heated through (2-3 minutes).
