Curried Tofu

Ingredients

  • 2 tsp. vegetable oil
  • 1 (15 oz.) package extra firm tofu, drained and cut into ½" cubes
  • ½ cup light coconut milk
  • 1 tsp. curry powder
  • 1 cup matchstick-cut carrots
  • ¼ tsp. crushed red pepper
  • 1 (15¼ oz.) can pineapple chunks in juice, drained
  • 1 medium red bell pepper, thinly sliced
  • ½ cup chopped fresh basil

Directions

  1. Heat oil in a large nonstick skillet over medium-high heat.
  2. Add tofu and cook until golden brown, stirring frequently (8 minutes). Remove from pan; keep warm.
  3. Add coconut milk and curry powder to pan, and cook, stirring constantly (1 minute).
  4. Add carrots, crushed red pepper, pineapple, and bell pepper; cook, stirring occasionally (5 minutes).
  5. Stir in tofu. Sprinkle with basil. Serve with white rice or rice noodles and fresh orange slices.
