Ingredients
- 1 cup fresh cranberries
- 2 tablespoons maple syrup
- 2 tablespoons red wine vinegar
- 4 tablespoons olive oil
- 1 medium shallot, minced
- 1/4 cup parsley, chopped
- 1/4 teaspoon salt
- Black pepper to taste
- 1 red cabbage, shredded
Directions
- Purée the cranberries, maple syrup, red wine vinegar and olive oil together until smooth.
- Stir in the shallots and parsley.
- Toss the vinaigrette with the red cabbage. Season salt and pepper. Cover and refrigerate for several hours to allow the flavors to meld.
