Bring the best of summer and fall together at your table with this elegant variation on coleslaw that is delightful as a side dish or a condiment for your favorite lean meats.

Ingredients

  • 1 cup fresh cranberries
  • 2 tablespoons maple syrup
  • 2 tablespoons red wine vinegar
  • 4 tablespoons olive oil
  • 1 medium shallot, minced
  • 1/4 cup parsley, chopped
  • 1/4 teaspoon salt
  • Black pepper to taste
  • 1 red cabbage, shredded

Directions

  1. Purée the cranberries, maple syrup, red wine vinegar and olive oil together until smooth.
  2. Stir in the shallots and parsley.
  3. Toss the vinaigrette with the red cabbage. Season salt and pepper. Cover and refrigerate for several hours to allow the flavors to meld.
