Bulgur with Dried Cranberries

Bulgur is a form of wheat that is most commonly found in tabbouleh. This dish is very similar to tabbouleh, but sweeter, using dried cranberries where tomatoes normally serve to provide acid.

Ingredients

  • 1 cup coarse-ground bulgur
  • 2 cups chopped, peeled, cucumber
  • 1 cup dried cranberries
  • ⅓ cup thinly sliced green onion
  • 1 cup finely chopped fresh flat-leaf parsley
  • 1 tsp. grated lemon rind
  • ⅓ cup fresh lemon juice
  • ⅓ cup extra-virgin olive oil
  • ½ tsp. kosher salt
  • ¾ tsp. freshly ground black pepper

Directions

1.) Place bulgur in a large bowl; cover with 2 cups boiling water. Let stand until liquid is absorbed (30 minutes). Fluff with a fork.

2.) Add cucumber and remaining ingredients; toss gently to combine.
