Ingredients
- 1 cup broccoli florets
- ½ cup chopped, cooked chicken breast
- ¼ cup chopped plum tomato
- ½ medium onion, finely chopped
- ½ tsp. Italian seasoning
- ⅛ tsp. salt
- 4 large eggs
Directions
- Spray oven-safe medium skillet with cooking spray and heat on medium. Add broccoli, chicken, tomato, onion, Italian seasoning, and salt. Cook until broccoli is just tender (3-4 minutes).
- Add eggs. Reduce heat to low and cover. Cook until bottom of frittata is set but top is still slightly moist (8-9 minutes).
- Broil on high with rack in the highest position until top is set (2-3 minutes).
