Broccoli Chicken Frittata - 1 Guiding Stars

  • 1 cup broccoli florets
  • ½ cup chopped, cooked chicken breast
  • ¼ cup chopped plum tomato
  • ½ medium onion, finely chopped
  • ½ tsp. Italian seasoning
  • ⅛ tsp. salt
  • 4 large eggs


  1. Spray oven-safe medium skillet with cooking spray and heat on medium. Add broccoli, chicken, tomato, onion, Italian seasoning, and salt. Cook until broccoli is just tender (3-4 minutes).
  2. Add eggs. Reduce heat to low and cover. Cook until bottom of frittata is set but top is still slightly moist (8-9 minutes).
  3. Broil on high with rack in the highest position until top is set (2-3 minutes).
