Balsamic & Parmesan Roasted Cauliflower

This recipe is easy to make and will make a great addition to your favorite entrée. Fresh cauliflower will give you the best texture, but frozen is fine—add 10 minutes to the roast time.

Ingredients

  • 8 cups cauliflower florets
  • 2 Tbsp. olive oil
  • 1 tsp. marjoram (optional)
  • ¼ tsp. salt
  • Pepper to taste
  • 2 Tbsp. balsamic vinegar
  • ½ cup grated Parmesan cheese

Directions

  1. Preheat oven to 450ºF.
  2. Toss cauliflower, oil, marjoram, salt, and pepper in a large bowl. Spread on a large baking sheet and roast until soft and brown on the bottom (15-20 minutes).
  3. Toss the cauliflower with vinegar and sprinkle with cheese. Return to the oven and roast until the cheese is melted and any moisture has evaporated (5 minutes).
