Gruyere cheese has a strong flavor that works well with the first peas and asparagus stalks of spring. Be sure to choose the thin, young asparagus stalks, as these will be the most tender.
Ingredients
- ½ c. asparagus pieces
- ¼ c. peas
- 2 eggs
- ⅛ t. salt
- ⅛ t. pepper
- 1 T. oil
- ¼ c. gruyere cheese, shredded
Directions
- Microwave the asparagus and peas together for about 1 minute, or until tender.
- Beat the eggs with salt and pepper.
- Heat the oil in a non-stick 10” skillet over medium heat. When the oil begins to sizzle, pour eggs into pan. Rotate the pan to allow eggs to form a thin, even layer.
- When egg is almost entirely cooked, add the cheese and vegetables to the center third of the eggs. Use a spatula to fold the sides of the egg over the fillings. Turn gently and cook until cheese begins to melt out the edge of the omelette.
