Tip: Chickpea flour, also called besan, can typically be found with ingredients for Indian cuisine in your grocery store. It’s a wonderful source of fiber and protein.
Ingredients
- 40 white button mushrooms, stems removed
- 1¼ cups + 2 Tbsp. chickpea flour
- ¾ cup water
- 2 Tbsp. minced chives
- ⅛ tsp. celery salt
- 1 tsp. salt
- 2 cloves garlic, minced
- 1 tsp. baking powder
- 3 sage leaves, minced
- ½ cup finely chopped spinach
Directions
- Preheat oven to 375ºF. Place mushrooms in a baking dish, stem-side up.
- Mix together remaining ingredients until smooth. Transfer batter to a piping bag with a wide tip, and pipe filling into mushroom cap or fill caps using a spoon.
- Bake until mushrooms tops are puffed golden brown on edges (30-35 minutes). Serve hot.
