Gluten-Free Stuffed Mushrooms

Not only do these make a fantastic option for the gluten-free eater in your house, these stuffed mushrooms will become a constantly requested item at any dinner or party by all of your guests.

Tip: Chickpea flour, also called besan, can typically be found with ingredients for Indian cuisine in your grocery store. It’s a wonderful source of fiber and protein.

Ingredients

  • 40 white button mushrooms, stems removed
  • 1¼ cups + 2 Tbsp. chickpea flour
  • ¾ cup water
  • 2 Tbsp. minced chives
  • ⅛ tsp. celery salt
  • 1 tsp. salt
  • 2 cloves garlic, minced
  • 1 tsp. baking powder
  • 3 sage leaves, minced
  • ½ cup finely chopped spinach

Directions

  1. Preheat oven to 375ºF. Place mushrooms in a baking dish, stem-side up.
  2. Mix together remaining ingredients until smooth. Transfer batter to a piping bag with a wide tip, and pipe filling into mushroom cap or fill caps using a spoon.
  3. Bake until mushrooms tops are puffed golden brown on edges (30-35 minutes). Serve hot.
