Zoodles with White Beans & Garlic Oil

This simple pasta dish is quick to make, and replacing part of your pasta with spiralized zucchini noodles is a great way to up the amount of vegetables in your meal.

Ingredients

  • 4 oz. spaghetti
  • 2 medium zucchini, spiralized
  • ¼ cup olive oil
  • 6 cloves garlic, sliced
  • Pinch of red pepper flakes
  • 1 (15 oz.) can no-salt-added cannellini beans, drained and rinsed
  • 1 cup halved cherry tomatoes
  • ¼ tsp. salt
  • ¼ cup sliced fresh basil

Directions

  1. Cook spaghetti according to package directions. Drain and add to a bowl with the spiralized zucchini (zoodles). The heat from the pasta will start to cook the zoodles.
  2. In the same pan over low heat, cook sliced garlic and pepper flakes in the oil until the garlic is golden (1-2 minutes).
  3. Stir in the beans, tomatoes, noodles, and salt. Toss to coat with garlic oil. Heat until zoodles have softened and beans are heated (3-5 minutes). Stir in basil and serve warm.
