This simple pasta dish is quick to make, and replacing part of your pasta with spiralized zucchini noodles is a great way to up the amount of vegetables in your meal.
Ingredients
- 4 oz. spaghetti
- 2 medium zucchini, spiralized
- ¼ cup olive oil
- 6 cloves garlic, sliced
- Pinch of red pepper flakes
- 1 (15 oz.) can no-salt-added cannellini beans, drained and rinsed
- 1 cup halved cherry tomatoes
- ¼ tsp. salt
- ¼ cup sliced fresh basil
Directions
- Cook spaghetti according to package directions. Drain and add to a bowl with the spiralized zucchini (zoodles). The heat from the pasta will start to cook the zoodles.
- In the same pan over low heat, cook sliced garlic and pepper flakes in the oil until the garlic is golden (1-2 minutes).
- Stir in the beans, tomatoes, noodles, and salt. Toss to coat with garlic oil. Heat until zoodles have softened and beans are heated (3-5 minutes). Stir in basil and serve warm.
