Ingredients
- 2 c. onion, chopped
- 1 c. fennel bulb, chopped
- 1/2 t. crushed red pepper
- 10 oz. hot Italian sausage
- 8 garlic cloves, minced
- 1/4 c. fresh sage, chopped
- 1 T. tomato paste
- 1 c. dry white wine
- 6 c. unsalted chicken stock
- 2 c. plum tomato, chopped
- 4 (14.5 oz.) cans no-salt-added cannellini beans, rinsed and drained
- 1/4 c. fresh parsley, chopped
Directions
- Heat a large, heavy-bottomed pan over medium heat. Coat pan with non-stick cooking spray. Add onion, fennel, red pepper, sausage and garlic. Cook until sausage is browned, stirring to crumble sausage. Drain off excess fat from sausage.
- Add sage and tomato paste; cook 1 minute, stirring constantly. Add wine; cook until liquid is reduced by half.
- Add the stock; bring to a boil, reduce heat, and simmer for a few minutes. Add tomato and beans, and cook until beans are heated through. Serve hot sprinkled with parsley, or freeze for up to 2 months.
- To Freeze: Cool soup to room temperature; place in a large zip-top plastic freezer bag. Lay flat in freezer–be careful not to put anything on top of the bag until it’s fully frozen.
- To Reheat: Place soup into a large, heavy-bottomed pot and heat on medium, stirring frequently, until hot.
