Veggie-Stuffed Portobellos

This speedy entrée is excellent in the summer, when fresh corn can be subbed in for the frozen and crispy new zucchini are abundant, but it works just as well for a quick weeknight dinner all year long.

Ingredients

  • 4 portobello mushrooms, cleaned
  • 2 Tbsp. olive oil, divided
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 med. zucchini, diced
  • 1 lb. bag frozen corn, thawed

Directions

  1. Heat a large skillet over medium high heat. Brush mushrooms with half the olive oil and grill until mushroom softens, 2-3 minutes. Flip mushrooms and continue grilling until fork tender, 2-3 minutes. Remove from pan and set aside.
  2. Heat remaining olive oil in a large sauté pan over medium high heat. Add garlic and bell pepper and sauté until pepper begins to soften, 1-2 minutes. Stir in zucchini and corn and cook until zucchini is soft and corn is heated through.
  3. Spoon veggies evenly into mushroom caps and serve hot.
