Vegan Caesar Salad

The creaminess of this Caesar salad dressing comes from the cashew butter. If you can’t find cashew butter at your store, you can also take unsalted, raw cashews and soak them in warm water for an hour before pureeing them to form the base of the dressing.

Ingredients

  • Dressing:

    • ½ cup unsalted cashew butter
    • ⅓ cup water
    • 1-2 garlic cloves
    • 2 Tbsp. olive oil
    • 1 Tbsp. capers
    • 1 tsp. Dijon mustard
    • ½ tsp. vegan Worcestershire sauce
    • 1 tsp. nutritional yeast
    • 4 Tbsp. lemon juice
    • 1 Tbsp. fresh parsley
    • ¼ tsp. sea salt
    • ¼ tsp. pepper

    Salad:

    • 1 head of romaine lettuce, chopped
    • 1 head of kale, stemmed and chopped
    • 1 (15 oz.) can no-salt-added white beans

Directions

  1. Puree all dressing ingredients until smooth. Thin with lemon juice or water to desired thickness.
  2. Place the chopped greens and beans in a large bowl and drizzle desired amount of dressing. Toss to coat.
