Sourdough Portobello Sandwich

Looking for a vegetarian-friendly hot sandwich that will get your mouth watering for scrumptious comfort food? Give this recipe a try. Feel free to replace the mayonnaise with a vegan option to make this recipe fully vegan, or skip it in favor of a little mustard.

Ingredients

  • 1 med. portobello mushroom, washed and sliced
  • 1 T. olive oil
  • Black pepper to taste
  • 1 t. balsamic vinegar
  • 2 slices sourdough bread
  • 1 clove garlic, minced
  • 1 T. mayonnaise
  • 1/2 c. baby spinach
  • 1/3 c. red pepper, roasted

Directions

  1. Heat the oil over medium-high heat. Add the mushroom and season with salt and pepper. Cook until golden-brown.
  2. Stir in vinegar and garlic. Cook for about 1 minute more.
  3. Toast the bread and spread with mayonnaise. Assemble sandwich and enjoy immediately.
