Ingredients
Dressing:
- 1 Tbsp. peanut butter
- 2 Tbsp. lite soy sauce
- 1 tsp. sesame oil
- 3 garlic cloves, minced
- 1 tsp. grated fresh ginger
Salad:
- 2 cups cooked thin spaghetti
- ½ cup thinly sliced pepper
- ½ cup thinly sliced carrots
- ¼ cup minced scallions
- ¼ cup bean sprouts
- Red pepper flakes to taste
Directions
- Combine dressing ingredients in a small saucepan. Bring the mixture to a boil, lower the heat, and simmer until slightly thicker (3-5 minutes).
- Toss salad ingredients together with warm dressing to coat.
- Chill and serve cold.
