Roasted Okra

Expand your vegetable horizons with this simple okra dish, made complex by the delicate balance of Indian spices. Serve as a side dish with your favorite meals or over brown rice.

Ingredients

  • ¾ tsp. hot paprika
  • ¼ tsp. cumin
  • ¼ tsp. coriander
  • ¼ tsp. fennel seeds, ground
  • ⅛ tsp. turmeric
  • Pinch of cinnamon
  • 1 Tbsp. vegetable oil
  • 1 lb. okra, halved lengthwise
  • ¼ tsp. salt
  • 2 Tbsp. lemon juice

Directions

  1. Blend the paprika with the cumin, coriander, fennel, turmeric, and cinnamon.
  2. In a large nonstick skillets, heat the oil. Add the okra, cut side down, and cook over high heat for 2 minutes. Reduce the heat to moderate and cook until browned on the bottom (4 minutes). Turn the okra and cook over low heat until tender (2 minutes).
  3. Sprinkle with spices and salt. Cook, stirring, until fragrant (30 seconds). Drizzle the lemon juice over the okra to serve.
