Roasted Italian Tomato Relish

Ingredients

  • 1 pound plum tomatoes, seeded, very coarsely chopped
  • 1/2 cup chopped fresh basil
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1/4 teaspoon (scant) dried crushed red pepper

Directions

1. Preheat oven to 350°F.

2. Combine all ingredients in 1-quart casserole.

3. Bake until tomatoes are soft, about 30 minutes. Season to taste with salt and pepper. Cool to room temperature.
