Spiralized pears offer an interesting texture and reduce the cook time, but if you don’t have a spiralizer, you can also dice the pears into small pieces. When picking a granola, look for options that are lower in added sugars and higher in fiber.
Ingredients
- 3 stalks rhubarb, diced
- 3 pears, spiralized
- 1 tsp. cinnamon
- ½ large orange, zest and juice
- ¼ cup granola
- ¼ cup walnuts, chopped
Directions
- Preheat the oven to 350ºF. Spray four ramekins with cooking spray.
- Toss rhubarb, pear, cinnamon, zest, and juice in a medium bowl. Divide the mixture between ramekins and bake for until pears are soft (25-30 minutes).
- Top ramekins with granola and nuts and bake until toasted (4-5 minutes).
