Pepper Pasta

Colorful, simple, and delicious, this recipe will be a hit around your dinner table! Improve the nutrition by looking for whole grain pastas or alternative pastas with higher amounts of protein to balance your plate.

Ingredients

  • 3 Tbsp. olive oil
  • 4 cloves garlic, minced
  • 2 red bell peppers, sliced
  • 2 orange bell peppers, sliced
  • 2 yellow bell peppers, sliced
  • ½ cup white wine
  • 1 lb. penne pasta
  • ¼ tsp. salt

    Optional Garnishes*:

    • ⅛ tsp. crushed red pepper flakes

Directions

  1. Heat oil in large skillet over medium. Sauté garlic until golden brown (30 seconds). Add bell peppers and wine. Cook covered, stirring occasionally, until tender (15-20 minutes).
  2. While peppers cook, cook pasta according to package directions. Drain. Toss with pepper mixture, salt, and sprinkle with crushed red pepper flakes, if desired.
