Banana muffins are a perfect way to start the day. These ones are packed with whole grains to set your day off on the right foot nutritiously.
Ingredients
- ¾ cup whole wheat flour
- ½ cup old fashioned oats
- ¼ cup firmly packed brown sugar
- 2 Tbsp. ground flax seeds
- 1 tsp. cinnamon
- ½ tsp. baking soda
- 1 tsp. baking powder
- ¼ tsp. salt
- 1 egg white
- 2½ Tbsp. canola oil
- ¼ tsp. vanilla extract
- 1 small banana, mashed
- ½ cup skim milk
Directions
- Preheat oven to 350ºF and line muffin pan with six paper muffin cups.
- Combine the dry ingredients: whole wheat flour, oats, brown sugar, flax seeds, cinnamon, baking soda, baking powder, and salt.
- In a separate bowl combine the wet ingredients: egg white, oil, vanilla, banana and milk.
- Gradually mix flour mixture into egg mixture until batter is just combined. Don’t overmix.
- Divide the batter into the six muffin cups and bake (15-18 minutes).
