Banana muffins are a perfect way to start the day. These ones are packed with whole grains to set your day off on the right foot nutritiously.

Ingredients

  • ¾ cup whole wheat flour
  • ½ cup old fashioned oats
  • ¼ cup firmly packed brown sugar
  • 2 Tbsp. ground flax seeds
  • 1 tsp. cinnamon
  • ½ tsp. baking soda
  • 1 tsp. baking powder
  • ¼ tsp. salt
  • 1 egg white
  • 2½ Tbsp. canola oil
  • ¼ tsp. vanilla extract
  • 1 small banana, mashed
  • ½ cup skim milk

Directions

  1. Preheat oven to 350ºF and line muffin pan with six paper muffin cups.
  2. Combine the dry ingredients: whole wheat flour, oats, brown sugar, flax seeds, cinnamon, baking soda, baking powder, and salt.
  3. In a separate bowl combine the wet ingredients: egg white, oil, vanilla, banana and milk.
  4. Gradually mix flour mixture into egg mixture until batter is just combined. Don’t overmix.
  5. Divide the batter into the six muffin cups and bake (15-18 minutes).
