Jalapeno Couscous

Putting in a little extra effort with a simple starch is well-worth your time. A touch of cumin and jalapeño add some heat to this refreshing side that will pair wonderfully with your favorite fish, straight off the grill.

  • 1 Tbsp. olive oil
  • 6 green onions, thinly chopped
  • 2 Tbsp. minced garlic
  • 1 tsp. cumin
  • 1¼ cups low-sodium vegetable broth
  • 1 cup couscous
  • 1 large tomato, finely diced
  • ¼ cup fresh cilantro, chopped
  • 1 jalapeño pepper, finely chopped
  • Juice of 1 lemon
  • ½ cup pine nuts, toasted

  1. Heat oil in a saucepan. Add green onions, garlic, and cumin. Cook until fragrant (1 minute).
  2. Add broth and bring to a boil. Remove from heat, stir in couscous, and cover. Let set until couscous is soft (10 minutes).
  3. Toss couscous with all ingredients except pine nuts. Sprinkle with toasted pine nuts to serve.
