Herb-Smashed Potatoes

There’s nothing like the creaminess of new potatoes steamed to perfection and simply seasoned with a little scallion, herbs, salt, and pepper.


  • 2 lbs. new red potatoes, large ones quartered
  • ⅔ cup low-fat plain yogurt
  • 2 scallions, chopped
  • ¼ cup minced fresh herbs
  • 2 Tbsp. butter
  • ¾ tsp. salt
  • Pepper to taste


  1. Bring 1″ water to a boil in a large saucepan fitted with a steamer basket. Add potatoes, cover and steam until very tender when pierced with a fork (20-25 minutes). Check water level halfway through and add more as needed.
  2. Whisk together remaining ingredients in a large bowl.
  3. Stir the cooked potatoes into the yogurt mixture, breaking them up with a fork until they crumble apart and clump together.
