There’s nothing like the creaminess of new potatoes steamed to perfection and simply seasoned with a little scallion, herbs, salt, and pepper.
Ingredients
- 2 lbs. new red potatoes, large ones quartered
- ⅔ cup low-fat plain yogurt
- 2 scallions, chopped
- ¼ cup minced fresh herbs
- 2 Tbsp. butter
- ¾ tsp. salt
- Pepper to taste
Directions
- Bring 1″ water to a boil in a large saucepan fitted with a steamer basket. Add potatoes, cover and steam until very tender when pierced with a fork (20-25 minutes). Check water level halfway through and add more as needed.
- Whisk together remaining ingredients in a large bowl.
- Stir the cooked potatoes into the yogurt mixture, breaking them up with a fork until they crumble apart and clump together.
