Serve this simple soup with a light salad to complete the meal. The bright flavors will cheer you in the middle of winter or refresh you on a summer day.
Ingredients
- 4 cups reduced-sodium vegetable broth (or chicken)
- 1/3 cup brown rice
- 12 ounces silken tofu
- 1 tablespoon olive oil
- 1/4 teaspoon turmeric
- 1/4 cup fresh lemon juice
- 2 tablespoons fresh dill, chopped
- 1/4 teaspoon freshly ground pepper
Directions
- Bring broth and rice to a boil in a large saucepan. Reduce heat to a simmer and cook until the rice is very tender.
- Transfer 2 cups of the rice mixture to a separate bowl and add tofu, oil and turmeric. Puree thoroughly with an immersion blender. Return the tofu mixture and remaining ingredients to the rice mixture and whisk to combine. Heat and serve.
