Ingredients
- 1 cup water
- 1 cup skim milk
- 4 Tbsp. quinoa
- 2 bananas, sliced
- 6 Tbsp. rolled oats
- 4 Tbsp. oat bran
- ½ tsp. salt
- ¼ tsp. cinnamon
- 4 Tbsp. chopped walnuts
- 4 tsp. brown sugar
- 1 tsp. vanilla extract
Directions
- Stir the water, milk, and quinoa together in a saucepan. Bring to a gentle boil. Reduce heat to low and simmer until the quinoa begins to soften (5 minutes).
- Stir in the banana, rolled oats, oat bran, salt, and cinnamon. Cook over low heat, stirring frequently, until the mixture thickens (4-5 minutes).
- Stir in the walnuts, brown sugar, and vanilla to serve.
