Gnocchi & Mushrooms

This simple dish cooks up quickly for an easy weeknight vegetarian meal. Gnocchi can be found either with the fresh pasta, with dried pasta, or in the freezer section of your grocery store.

Ingredients

  • 4 Tbsp. olive oil, divided
  • 4 oz. mushrooms, quartered
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • 2 cloves garlic, minced
  • ½ cup dry white wine
  • 8 oz. gnocchi
  • ½ cup fresh basil, chopped
  • 3 Tbsp. lemon juice

Directions

  1. Heat half of the oil in a large frying pan over medium heat. Add the mushrooms to the pan. Season with salt and pepper and cook until softened (4-5 minutes).
  2. Stir in the garlic and cook until fragrant (1 minute).
  3. Pour in the wine and cook until the wine is reduced by half.
  4. Gently stir in the remaining oil, gnocchi, basil, and lemon juice. Cook until gnocchi is heated through and lightly browned (5 minutes).
