Easy Banana Bran Breakfast Cookies

Nutritious breakfast cookie recipes can be hit or miss on the flavor front. This one is simple and tastes mildly of bran. It’s a very flexible base to work with. Add in chopped apples or ripe pears for little bites of flavor. Make it more of a meal by adding a few tablespoons of chopped nuts. For a special treat, add a few tablespoons of dark chocolate chips.

Ingredients

  • 2½ ripe bananas
  • ½ cup chopped dates
  • ½ cup flax seeds
  • ½ cup oat bran
  • 1½ cups whole wheat flour
  • 1 cup soy milk
  • 1 tsp. baking soda
  • ½ Tbsp. salt

Directions

  1. Preheat oven to 350°F.
  2. Mash bananas together with flax seed in mixing bowl. Stir in all other ingredients and mold the mixture into 8 cookies. Place on a nonstick baking sheet. Bake until firm to the touch (30-35 minutes).
