Decadent Turkey Chili

A healthy alternative to traditional chili, this dish will delight your senses with a rich selection of flavoring components, including beer and chocolate, which bring out the most robust flavors in chili.

  • ¼ cup canola oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1½ lbs. ground turkey breast
  • 6 cloves garlic, minced
  • ¼ cup chili powder
  • ¼ cup whole-wheat flour
  • 2 (12 oz.) bottles dark beer
  • 1 oz. dark chocolate, chopped
  • 2 (15 oz.) cans no-salt-added diced tomatoes
  • 2 (15 oz.) cans no-salt-added kidney beans, drained and rinsed
  • 2 cups corn
  • 1¼ tsp. salt
  • 4 oz. tortilla chips

  1. Heat the oil in a large, heavy-bottomed pot over medium heat. Add the onions and pepper and sauté until they soften and brown (8-10 minutes).
  2. Add turkey, breaking up, and cook until brown (5-8 minutes). Drain fat.
  3. Add garlic, chili powder, and flour. Cook, stirring, until flour smells nutty (1 minute).
  4. Add beer, chocolate, and tomatoes. Simmer until the sauce thickens and the turkey is fully cooked, stirring occasionally (20 minutes).
  5. Stir in the beans, corn, and salt. Cook until heated through (3-5 minutes)
  6. Serve hot with tortilla chips.

One Casserole Dish

Turkey & Bean Enchiladas

More than a few of us have some not-so-fond food memories from our childhood of overcooked noodles in congealed soup, but casseroles are a classic way to make a family dish in a single pan...sort of. I cheated on this one. In point of fact, a lot of casseroles require you to precook ingredients and can be on the fussy side. The beautiful thing about them, though, is that you can make them in advance so you only have to slide that night's dish into the oven when you come home. For meal preppers, mastering the casserole is a must.
