Medjool dates are sweet and earthy in a way that makes them a wonderful approximation for caramels. Paired with almond flour and almond butter to create a smooth texture with a nutty taste, these candies have no added sugar and still provide a delightful sweet treat.

Ingredients

  • 1½ lbs. dates, pitted and chopped
  • ⅓ cup almond flour
  • 3 Tbsp. almond butter
  • 1 Tbsp. vanilla extract
  • ½ tsp. salt

Directions

  1. Line an 8″x8″ baking pan with parchment paper, leaving an overhang to help remove caramels from pan later.
  2. Blend all ingredients in a food processor to form a thick paste.
  3. Spread the date mixture in the pan in an even layer. Freeze to set (1-2 hours).
  4. Cut into 1″ squares and store in freezer.
