Growing up, “company” chicken was the dish that came out on for honored adult dinner guests or family parties. This recipe is simple and inexpensive, though, which makes it a wonderful meal for any weeknight…and still delicious enough your company would be happy to come back for more.
Ingredients
- 8 oz. spaghetti
- 2 tsp. olive oil
- 2 onions, chopped
- 2 bell peppers, thinly sliced
- 1 lb. skinless, boneless chicken breasts
- 1 (28 oz.) can crushed tomatoes
- 1½ tsp. Italian seasoning
- ½ tsp. garlic powder
- ½ tsp. chili powder
- ¼ tsp. crushed red pepper
- ⅛ tsp. cumin
Directions
- Heat oil in a skillet over medium heat. Sauté the onions and peppers until tender (8-10 minutes). Remove from heat and set aside.
- Place the chicken in the skillet, and brown, flipping once (5 minutes per side).
- Return onions and peppers to skillet. Add tomatoes, Italian seasoning, garlic powder, chili powder, red pepper, and cumin. Cover and reduce heat to low. Cook until chicken reaches a minimum internal temperature of 165ºF (25-30 minutes).
- Cook spaghetti according to package directions. Serve chicken and sauce hot over pasta.
